Artificial Intelligence is the study of how to build machines capable of gathering information from their environment and processing that information to choose a course of action that will maximize their success at their appointed tasks.

This is, of course, a simplistic way of describing a very complex idea. Fundamentally, our goal is to build machines capable of operating on their own in a fashion that we would deem to be intelligent. To aid in this, we draw insights from a variety of fields, including cognitive science, theory of computation, neuroscience, linguistics, and computer science.
